For many years, the old marani in Dzveli Anaga stood quiet.
Its stone walls remembered harvests, its buried qvevri held the echoes of generations, and the land patiently waited for its voice to return.
That voice returned with Ubatono
For the first time in decades, wine was once again born here — not as a repetition of the past, but as a dialogue between history and the present. Ubatono revives a more than 100-year-old winery in the heart of Kakheti’s Tibaani microzone, where ancient qvevri traditions meet modern winemaking precision.

An 8,000-Year Tradition, Reawakened
Georgia is the birthplace of wine, and qvevri winemaking is its most authentic expression. Large clay vessels buried underground have shaped Georgian wines for over 8,000 years, allowing grapes to ferment naturally, guided by the earth itself.

At Ubatono, these qvevri are not replicas — they are original vessels passed down through generations and still in use today. Each one carries its own character, history, and rhythm, shaping wines that cannot be replicated elsewhere.
Ubatono: One Without a Master
The name Ubatono comes from ancient Georgian symbolism and means “one without a master.” It represents freedom, independence, and self-ownership — values deeply rooted in Georgian culture.
The mounted archer featured in the logo, inspired by 5th-century stone reliefs from Bolnisi Sioni, symbolizes the guardian of the land — a figure who protects tradition, honors craftsmanship, and takes responsibility for the fruit of his work. This philosophy defines Ubatono’s approach to winemaking.


Tradition Meets Modern Precision
While the soul of Ubatono lies in qvevri, the winery embraces modern technology where it matters most. Careful temperature control, precise hygiene, and controlled processes ensure stability and clarity, allowing the true character of the grapes and terroir to speak without interference.
Modern tools support the process but never dominate it. The result is wine that is expressive, structured, and true to its origin. 

Wines Shaped by Terroir
Located in the Tibaani microzone of Kakheti, Ubatono works with indigenous Georgian grape varieties including Saperavi, Rkatsiteli, Kisi, and Mtsvane. Fermented and aged in qvevri, these wines reveal depth, texture, and balance — shaped by clay, time, and patience.




Each bottle reflects its place of origin, preserving the natural character of both grape and land.
