That voice returned with Ubatono<\/strong>

For the first time in decades, wine was once again born here \u2014 not as a repetition of the past, but as a dialogue between history and the present. Ubatono revives a more than 100-year-old winery in the heart of Kakheti\u2019s Tibaani microzone, where ancient qvevri traditions meet modern winemaking precision.<\/p>\n\n\n\n

An 8,000-Year Tradition, Reawakened <\/strong>

Georgia is the birthplace of wine, and qvevri winemaking is its most authentic expression. Large clay vessels buried underground have shaped Georgian wines for over 8,000 years, allowing grapes to ferment naturally, guided by the earth itself.

The name Ubatono comes from ancient Georgian symbolism and means \u201cone without a master.\u201d It represents freedom, independence, and self-ownership \u2014 values deeply rooted in Georgian culture.

The mounted archer featured in the logo, inspired by 5th-century stone reliefs from Bolnisi Sioni, symbolizes the guardian of the land \u2014 a figure who protects tradition, honors craftsmanship, and takes responsibility for the fruit of his work.
