following an 8,000-year-old winemaking tradition.
The winery of Ubatono has a history of more than 100 years, preserving the true heritage of Georgian qvevri winemaking.The ancient qvevri, still in use today, have been passed down through generations, continuing the traditional method of wine fermentation.The winery is located in the Tibaani microzone, a renowned area known for its unique terroir and distinctive wines.
The name Ubatono comes from ancient Georgian tradition and means“one without a master” — a symbol of freedom, independence, and self-ownership.
Inspired by the 5th-century stone reliefs of Bolnisi Sioni, the mounted archer in the logo represents the guardian of the land — a figure who protects tradition, heritage, and the fruits of his work. This philosophy reflects our approach to qvevri winemaking:authentic wine, created with respect for the land, time-honored methods, and generations of inherited knowledge.
Saperavi | QvevriRed Dry Wine
Saperavi is Georgia’s most iconic red grape variety. Qvevri-aged Saperavi is known for its deep, dark color, rich structure, and intense aromas. The wine reveals notes of blackberries, cherry, and subtle spices. Full-bodied with firm tannins and a long, persistent finish.
Rkatsiteli | QvevriWhiteDry Wine
Rkatsiteli is one of the oldest Georgian white grape varieties. When fermented in qvevri, the wine gains additional body and complexity. It offers aromas of ripe apple, pear, and light herbal notes. Fresh, well-balanced, with lively acidity.
